I'm interested in ergonomics in hotels for my master thesis. In Italy there aren't reports in this subject. What could you suggest to me?

I can't think of any sources of information that are directly related to this.

When I have done work in the UK on hotel safety, I have looked at Building Regulations that cover things like fire escapes, balcony rails, staircase design, and other safety features. There are also regulations that cover swimming pools and food hygiene in the kitchens. Many of these things have an ergonomics aspect to them. 

I think you will have to consider all the ways that guests and staff use the hotel, and then look for Regulations that cover them, and then look in the Regulations to see which aspects relate to ergonomics and which do not.
